Shaved Fennel and Arugula Salad

Simple yet lovely salad that uses fennel as its base. Fennel is somewhat of an acquired taste, with licorice undertones, so I suggest taste testing before its inclusion in recipes….if you do like it, you’re in luck given its beneficial digestive properties!….

RECIPE 

  • 3 TBLS squeezed lemon juice
  • 1 tsp red wine vinegar
  • 1 tsp anchovy paste
  • 1/2 cup EVOO
  • Dash of sea salt
  • 1 6-ounce package arugula
  • 1 fennel bulb, sliced thinly
  • 1/3 cup oil-cured pitted black olives, halved
  • 2 cups Pecorino-Romano cheese shavings
  • 1/2 red onion thinly sliced

Whisk the first five ingredients together for the dressing, toss with the last five ingredients…simple as that!
